Making Your Cannabutter

The first step toward making homemade edibles is making your cannabutter.  First, measure out 2 cups of HHC flower buds, and sprinkle them evenly onto a parchment-lined baking sheet.  Next, bake them at 250 degrees for 25 minutes, as this activates the HHC through a process called decarboxylation.

From there, you can coarsely grind your HHC buds and pour them into a small saucepan, along with 1 cup of water and 2 sticks of unsalted butter.  Place the saucepan on low heat, and then simmer the mixture for 2 and a half hours, never allowing it to reach a full boil.  Lastly, strain the infused butter into a jar and refrigerate for up to 6 months.

Apple Crumble

There’s nothing like freshly baked apple crumble, especially with a big scoop of vanilla ice cream on top.  This apple crumble recipe is easy, and then makes a big impression.

Ingredients:

  • 2 lbs fresh green apples, sliced into ½ inch wedges, with cores discarded
  • ¾ cup white sugar
  • 1 tbsp lemon juice
  • 4 tsp cornstarch
  • 6 tbsp cannabutter
  • 1/3 cup light brown sugar
  • 1 cup all-purpose flour
  • 1 tsp salt

Preparation:

  1. Preheat your oven to 375 degrees, and then grease an 8-inch pie tin.
  2. In a mixing bowl, combine the apples, white sugar, lemon juice and cornstarch.  Now, pour the mixture into your pie tin.
  3. In a larger bowl, add the remaining ingredients.  Use your hands to mix, breaking up the butter until you get a coarse, crumbly consistency.
  4. Bake for about 45 minutes, or until the fruit is bubbling beneath the topping.

Blueberry Bars

Another delicious fruity baked treat is these rich and chewy blueberry bars, which are absolutely irresistible.  Good luck eating just one!

Ingredients:

  • ½ cup cannabutter, melted in a saucepan on low heat
  • 1 ½ cups all-purpose flour
  • 1 ½ cups oats
  • ½ cup light brown sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 1 cup blueberry jam

Preparation:

  1. Preheat your oven to 350 degrees.  Line a 9-inch square baking tin with a sheet of parchment paper.
  2. Combine all of the ingredients, minus the jam, in a small mixing bowl, and use a mixer to create the dough.
  3. Press 2/3 of the dough tightly into the baking tin and spread the jam evenly on top.  Then, cover with the rest of the dough, again pressing it down.
  4. Bake for 30-45 minutes, until the top is golden-brown.

Garlic Knots

Some of the best baked goods aren’t sweet but savory.  Case in point: garlic knots, which are buttery, fluffy, chewy and garlicky, all at once.  Oh, and did we mention that these couldn’t be easier to make?

Ingredients:

  • 1 16-ounce pack of pre-made pizza dough
  • 6 tbsp cannabutter
  • 2 tsp salt
  • 5 garlic cloves, stems removed, peeled and minced
  • 1 tsp dried oregano

Preparation:

  1. Bring the pizza dough to room temperature by letting it sit on the kitchen counter for a half hour.
  2. Preheat your oven to 350 degrees.  Line a baking sheet with parchment paper.
  3. Roll out the pizza dough into a square on a floured surface, and then cut the square into about 12 strips, before cutting each strip in half.  This will give you 24 garlic knots.
  4. Twist each strip into the shape of a knot, and place the knots onto your parchment paper.
  5. Add the butter, oregano and garlic to a small pan and cook on low until the garlic becomes soft.  Be careful not to let the garlic burn.
  6.  Brush each garlic knot with the butter, garlic and oregano mixture.
  7.  Place the sheet into the oven and bake the knots for 15 minutes.

Potato Skins

Another fantastic savory baked treat is potato skins, which you can turn into a whole dinner by adding some veggies, or simply enjoy as a mid-afternoon snack.  Of course, they’re great for a party, too!

Ingredients:

  • 6 medium-sized russet potatoes
  • Salt and pepper, to taste
  • 6 tbsp cannabutter
  • 2 cups shredded cheddar cheese
  • 4 strips of cooked bacon, crumbled or chopped coarsely
  • 2 tbsp fresh chives
  • Sour cream, for serving

Preparation:

  1. Preheat your oven to 425 degrees.  Cut a small 1-inch slit on top of each potato, then place on a baking sheet.  Bake for 45-60 minutes, until potatoes are easy to pierce with a fork.
  2. Cut each potato in half lengthwise, and scoop out the inside of each potato, leaving a thin layer of potato inside.
  3. Sprinkle salt and pepper inside the potato, and divide the butter evenly before placing into each potato skin.
  4. Bake each potato skin for another 8 minutes to make it crispy.
  5. Fill the inside of each potato with cheddar and bacon, and broil just until the cheese is bubbling.
  6. Allow the potato skins to cool before topping them with sour cream and chives.

Strawberry Shortcake

Strawberry shortcake is always a crowd-pleaser, and this shortcake recipe is so easy it should be illegal.  It takes just a short period of time to make, and always hits the spot.

  • 1 package of biscuit dough

  • Whipped cream (store-bought or homemade)
  • 1 tbsp fresh mint leaves, thinly sliced, for garnish

  2. While the biscuits are in the oven, combine the strawberries, lemon and sugar in a small bowl.
  3. Remove the biscuits from the oven and allow them to cool for 15 minutes.  Then, slice each one across the width.
  4. Top half of the biscuit halves with strawberries, followed by the whipped cream and fresh mint leaves, before leaning the other half of each biscuit on top.
